Abstract: This thesis presents the results of the implementation of a soybean processing plant community for flavored milk, performed by ESPOL students of various carreers, as consultants. The beneficiaries belong to “Las Malvinas”, a suburb of Guayaquil and the investor the Rotary Club. Sources of information on the development of community enterprises in the country proved that starting a business is not just having the ability to create a product or service, if not knowledge of the production chain. Students developed the formulation, plant design, installation, testing and production methods, as well as training to three women in the community who manage the plant. The lack of proper implementation of hygiene practices at the start of production, product in process and finished presented microbial contamination. Based in BPM standar the problem was solved. Currently the plant operates at full capacity, producing 960 bottles of milk 250cc. According to cash flow, the plant is operated sustainably. The benefits were: job creation, professional practice for students, the demonstration of transfer technology to communities in need and the ability to lay the groundwork for a methodology to implement sustainable production projects with students.
