Viabilidad técnica y económica de la instalación de un sistema de control para el cocinado de atún en una planta enlatadora local

Abstract

El objetivo principal de este trabajo es exponer la viabilidad técnica y financiera de la instalación de un sistema automático de cocinado por control de temperaturas en una importante planta atunera.

Primeramente, se realizará una introducción al mercado del atún y se revisará la situación de una planta con información estadística. Después se fundamentarán los principios del cocinado industrial y las ventajas de un sistema automático sobre un sistema de control manual. También se detallarán los equipos y la inversión necesaria.

Finalmente se expondrán posibles escenarios financieros ante posibles cambios en las variables que afectan la rentabilidad del proyecto y se realizarán las conclusiones finales al respecto.

The main purpose of this project is to expose the technical and financial viability for installing an automated temperature-based precooking system in an important tuna cannery.

First of all, there will be an introduction to the tuna market and a review of the plant situation with statistical data. After that, there will be and introduction to the industrial cooking fundamentals, and the advantages of an automated control system over a manual operated system will be detailed. Equipment and the investment will also be detailed.

Finally , we will show some posible financial scenarios according to possible changes in the variables that affects the profit of the project.
