Abstract: In this project investigated various global food trends, from our ancestors to the present, with innovative ideas that potentiates the nutritional value and leading to environmental protection. This is a new trend, as is the production and consumption of food-based organic flowers, which have been developed with the goal of finding an alternative food to keep healthy and meet the needs of natural resource use free of chemicals implemented farming, which pollutes the environment and generate harmful to health. Since our eminently agricultural country, with large tracts of land and climate suitable for cultivation, the main factor for developing organic farming of flowers that will enable investors and stakeholders implementing the project of production and marketing of flowers in jam Guayaquil. It is important to mention that the production of flowers, organic jam, and the production sector provides a new alternative investment, and a new consumer trend for healthy and quality food.
