Description: El presente trabajo busca contribuir a la nutrición de sus beneficiarios por medio de la diversificación de su cartera de productos con opciones más nutritivas que las ofrecidas por el mercado. Considerando este enfoque y la abundante cantidad prevista de donaciones de banano y plátano a recibir por la institución, el presente proyecto tuvo como objetivo desarrollar un snack nutritivo para niños aprovechando dichos recursos. El desarrollo del producto inició por la definición del concepto del snack considerando un enfoque racional y sistemático.
metadata.dc.description.abstractenglish: A food bank in Guayaquil (Ecuador) seeks to contribute to the nutrition of its beneficiaries by diversifying its product portfolio with more nutritious options than those offered by the market. Considering this target and the large projected donation of banana and plantains, this project aimed to develop a nutritious snack for children taking advantage of these resources. The product development process began with the definition of the snack concept considering a rational and systematic approach. Product formulation was then completed by optimization with linear programming techniques. Its specifications were defined according to the product concept and regulations on related products. In addition, manufacturing process was described using diagrams and the Systematic Layout Planning (SLP) methodology was applied as well. Finally, financial indicators were calculated through a cost analysis. As a result, production of a banana bar with plantain and peanut paste was proposed. The nutritional composition of the product provides 10% potassium, 8% fiber and 8% vitamin A, of their corresponding recommended daily intake (RDI) values. Finally, the project estimated an internal rate of return (IRR) of 57%, which qualified its implementation as profitable. This work considers feasible to use highly available donations of bananas and plantains, combined with compatible ingredients, to obtain a nutritious snack for children benefiting from a food bank.
